Not sure on how and where to explicitly set the exported file name.
But what i have seen is attachment gets downloaded with default EntitySet name.
If my URL is ' ...../FlightCollection?$format=xlsx ' , then attachment name which gets downloaded would be FlightCollection which is my EntitySet name defined in my GW Model.
